Spicy cheese taco meatballs

These make a wonderful appetizer for any occasion. 

1 pound ground beef

3 cups all purpose baking mix

1 8 oz. package shredded Mexican blend cheese 

1 8 oz. package shredded Monterey jack cheese with peppers

1 package taco seasoning 

3 large eggs, lightly beaten 

1/2 cup minced onion

1 jalapeño, seeded and minced

Cilantro, optional

Preheat oven to 350 degrees. Line rimmed baking sheets with foil.

In a large bowl mix beef, baking mix, all cheese, taco seasoning, eggs, onion, jalapeño, and cilantro

Until well combined. Shape into two-inch balls. Bake until golden brown, about 20 minutes. Serve warm.
