Summer pound cake
I love this summer pound cake. It's the absolute best ever!
A sweet friend in South Carolina shared it with me and I've been in love with it ever since. Enjoy!
1 1/2 cups butter, softened 2 cups sugar 5 eggs 3 cups all purpose flour 1 tsp. baking soda 1 tsp. Salt 3/4 cup frozen lemonade concentrate, thawed 1/2 cup sour cream 2 TBSP lemon zest Pre-heat oven to 325 degrees. Spray bundt pan with spray with flour. In a large bowl beat butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. In another bowl, stir together flour, soda and salt. Gradually add flour mixture to butter mixture alternately with lemonade. Beat until just combined. Add lemon zest, beating to combined. Pour batter into prepared pan. Bake for 1 hour. Cool. Drizzle Lemonade glaze over cake. Garnish with lemon slices. Lemonade Glaze: 1/4 cup whipping cream, 2 tbsp of frozen lemonade, thawed. 2 cups confectioners sugar. Gradually whisk until smooth.
