Batter fried mushrooms

These are the perfect appetizers or tailgate snack - and you’re guaranteed not to have any leftovers.

1 cup all purpose flour

1/2 c. cornstarch

1 Tbsp.  grated parmesan cheese

3/4 t. baking powder

1/2 t. garlic powder

1/2 t. Italian seasoning

1/2 t. dried thyme

1/8 t. cayenne pepper

1/8 t.  salt

1/4 t. pepper

1 cup buttermilk

2 cups panko bread crumbs

10 oz. package of cremini mushrooms, stems trimmed

oil for frying

In a shallow dish, combine flour, cornstarch, parmesan cheese, baking powder and seasonings and mix well.  

Add buttermilk; stir to form batter.  Place bread crumbs in a second shallow dish. Dip mushrooms into batter; let excess drip off. Roll mushrooms in bread crumbs to coat.  Heat oil in a skillet.  

Place mushrooms in skillet, careful not to crowd them and fry for 5-7 minutes or until golden brown. Place on paper towel to cool. Serve with your favorite dipping sauce.
