This is a tasty high-fiber start to your day that is fast and easy to make.
1/4 cup of flaxseed meal*
1/4 tsp baking powder
1 to 3 tsps fat (butter, coconut oil, peanut butter, cream cheese)
Sweetener to taste (1 to 2 pkts of Splenda, or a Tbs of sf daVinci's, or 1 or 2 tsp FiberFit)
Mix well, add 1 egg. Mix well again. Nuke for 1 minute, longer for smaller microwaves or if you add fruit.
* Any combo of "flour" will work. Flaxseed meal, coconut flour (which MUST be mixed with another meal, otherwise it's too dry), almond meal, Carbquik, etc.)
I like to use the round plastic storage containers for this, but you can use a teacup, or a cereal bowl, or any other container that will microwave.
You can add cocoa for a chocolate "cake", and if you use peanut butter, it's to die for.
Add cinnamon for a nice spice muffin, add nutmeg, cloves and/or ginger to taste, if you like them.
If you want to add blueberries, they need to be fresh or thawed from frozen, and nuke for at least 20 to 30 extra seconds.
For a savory muffin, omit the sweetener, add parmesan cheese, garlic and/or onion powder. For a corn muffin, mix in 2 Tbs corn bran.
