This gorgeous weather makes this the perfect dessert or afternoon snack. They are easy and travel well so don't hesitate to add this special treat to a lunchbox or potluck. 

Lemon bars

1 cup butter, melted

2 cups flour

1/2 cup powdered sugar

4 eggs, beaten

2 cups sugar

6 Tbsp. fresh lemon juice 

1 tsp baking powder 

Additional 1/2 cup flour for later 

Combine melted butter, flour, and powdered sugar. Press into 9x13 baking dish and bake at 350 degrees for 15-20 minutes or until golden brown. 

While crust is baking, mix eggs, sugar, lemon juice, baking powder and the 1/2 cup flour. Pour mixture over crust and bake 20 minutes more. 

Sprinkle with powdered sugar, cut into bars and enjoy!
