Peanut butter cheesecake bars
1- 1 pound package of peanut butter-filled cookies, crushed (I use Nutter Butters)
1/2 butter, melted
2-8ounce packages of cream cheese, softened
1/2 cup creamy peanut butter
1/2 cup sugar
3/4 cup salted roasted peanuts, chopped
Preheat oven to 350. Line a 9x13 baking pan with parchment paper and coat with cooking spray.
In a medium bowl, combine crushed cookies and melted butter. Press mixture firmly into prepared pan. Bake for 8 minutes.
In a large bowl, beat cream cheese, peanut butter and sugar with a mixer at medium speed until creamy, about 2 minutes.
Add eggs, beating until combined. Pour mixture over crust, and sprinkle with peanuts. Bake until lightly browned and center is set, about 20 minutes. Let cool. Refrigerate in an airtight container for up to 3 days.
