Lime crinkle cookies

These cookies are a delicious treat on a hot day. Enjoy!

1/2 cup butter, softened

1 cup sugar

1 large egg

2 cups self rising flour

2 tablespoonfuls of lime zest

1 tablespoon lime juice

2 tablespoonfuls of powdered sugar

Preheat oven to 350 degrees. 

In a large bowl, beat butter and sugar at medium speed with a mixer until fluffy, 3-4 minutes. Add egg, beating until combined. Add flour and lime zest and juice. Beat until combined. 

Roll dough into 1-inch balls, place 2 inches apart on cookie sheet. 

Bake until edges are lightly browned, approximately 12 minutes. Let cool on pan 3 minutes then transfer to wire rack to cool completely. Sprinkle with powdered sugar.
