Josefina Saldana, 38, is living the dream.
"You're never too old to start something new," she said.
On Monday, Saldana opened a new business, Mi Rincon Favorito, at 114 Walnut Street on the downtown square.
The English translation of the the Mexican food restaurant's moniker is "My Favorite Place," and Saldana said the new venture brings together her favorite people and a shared love of cooking.
"Everyone working here is family," she said, pointing to her mother, Celia, sister-in-law, Ana, niece, Daysi, and close friend, Claudia. "My older brothers stayed here all night Sunday getting everything ready, but today, it was just us ladies working."
Just after the women closed up shop on opening day, Saldana agreed to answer a few questions about the business.
1 - What led you to open the restaurant?
I decided to do this to help support my family. It's something we can do together. Even before the restaurant opened, whenever we were together, we always cooked something special and we are still doing that. It's something we really enjoy, it brings the family together.
2 - What makes your restaurant different?
People like to eat Mexican food, but most have only eaten Tex-Mex. We want to provide traditional Mexican food - that's what we cook.
3 - What was the big seller on opening day, and what is your specialty?
The chili rellenos sold out first, and they are something everyone should try. My mom's specialties are gorditas and burritos, mine is tamales. I moved to Glen Rose in 1998, and at the end of the year in 1999, I started selling and delivering tamales in Glen Rose and Granbury.
